Cacao, Coconut & Oat Biscuits

Coconut seems to be popping up in quite a few of my recipes lately. But I just can't seem to resist throwing in a handful every time I bake something. I even have it sprinkled on my breakfast in the morning! 
On the weekend I was lucky enough to be gifted with a huuuuge bag of raw cacao powder from my generous mum. I ran out awhile ago and never got around to tracking down some more. Now I'm on the look out for recipes to use it all up! I whipped these biscuits up the other morning instead of doing more productive things, like studying. But hey, sometimes you just feel like baking damn cookies.


Cacao, Coconut & Oat Biscuits 
(Makes about 18)

Ingredients
1 cup rolled oats
3/4 cup flour (I used wholemeal)
1 tbs honey (or any sweetener you like. These biscuits aren't overly sweet, so you can also up the quantity if you so desire)
2 tbs olive oil
1/2 cup milk
1 tsp baking soda
1/4 cup shredded coconut, plus extra.
1 heaped tbs raw cacao powder

Preheat the oven to 180 degrees celsius. Throw all the ingredients into a bowl, and combine (it's that simple). Spoon into small balls on a lined baking tray, and flatten slightly. Sprinkle the extra coconut on top, and pop them in the oven for about 15 minutes, or until cooked.
Enjoy!

These biscuits are nothing special, but they are the perfect little snack to take along to uni with me!

  1. I love coconut in everything too - still am yet to try cacao but everything goes well with coconut so am sure I would love them
